Healthy Banana Bread Cookies

These bananas bread cookies are soft, delicious, and loaded with nutrients!

Equipment

  • 1 Hand mixer optional (can mix the icing with a whisk)

Ingredients
  

Wet Ingredients

  • 2 ripe bananas
  • 1/2 cup almond butter
  • 1/4 cup water
  • 1 TBSP vanilla extract

Dry Ingredients

  • 1 + 1/4 cup almond flour
  • 1 TSP baking powder
  • 1 TSP cinnamon
  • 1/4 cup dark chocolate chips
  • 1/4 cup raisins
  • 1/4 TSP salt

Cream Cheese Icing

  • 4 TBSP cream cheese room temp
  • 4 TBSP Swerve powdered sugar substitute or use powdered sugar
  • 2 TBSP butter room temp
  • 1/2 TSP vanilla extract

Instructions

  • Preheat the oven to 350 degrees F
  • Mix all the wet ingredients in a bowl, and all the dry ingredients in a separate bowl
  • Combine wet with the dry and use an ice cream scooper to make 8-10 cookies. Lay out the dough on a garment paper lined baking tray and flatten them out with a spoon
  • Bake for about 20 minutes or until cookies are nice and golden.
  • While the cookies are baking, make your icing by mixing all 4 ingredients using a hand mixer or a whisk
  • Let the cookies cool off fully before topping with cream cheese icing. Store in fridge
