Ingredients
1.5 cupsalmond flour
1/2TSPbaking soda
1/4TSPsalt
1/4cuppure maple syrup
1/2cupnatural peanut butter
2TSPvanilla extract
6Medjool dates, halved pits removed
1TSPbutterfor sautéing the dates
4squaresLindt dark chocolate70% or higher (or 1/4 cup dark chocolate chips)
1TBSPavocado or coconut oil
Instructions
PEANUT BUTTER COOKIES
Preheat the oven to 350 degrees F and line a cookie sheet with parchment paper
In a medium mixing bowl, add the peanut butter, maple syrup and vanilla, and mix well.In a separate, small bowl, whisk together the almond flour, baking soda and the salt. Then add the dry ingredients to the bowl of wet. Mix well using your hands as the batter will be quite thick, but just keep mixing until incorporated
Divide the mixture into 12 balls of dough and place on your tray. Then either using a fork or the palm of your hand , press down on each ball to flatten. Put the dough in the fridge while you make your caramelized dates
CARAMELIZED DATES
Take each date and break it into 2 pieces. Flatten each piece using your fingers so that the diameter of the date is roughly the same as your flattened cookie
Sauté each date for 1-2 min on each side on low medium heat and 1 tsp worth of butter. Pat the date on top of the cookie then bake for 10 minutes
CHOCOLATE LAYER
While the cookies are baking, melt 4 square Lindtt chocolate or about 1/4 cup dark chocolate chips with 1 TBSP coconut or avocado oil. Mix well
Once you remove the cookies from the oven, let cool for 10 minutes and do not touch the cookies during this time. After the 10 minute rest, drizzle the cookies with dark chocolate and pop them in the fridge for about an hour to let the chocolate solidify
