Add all your filling ingredients into a food processor or a big bowl if mixing by hand. Mix the ingredients until a thick dough forms.
Shape the dough into a thick sausage shape. Cut the sausage lengthwise in half, then cut the half into 5 pieces
Use your hands to roll each piece into a little ball, flatten the ball using your palms
Place the whole hazelnut in the centre of each ball and roll the protein ball around the hazelnut and place on a parchment-lined tray
Once you finish all 10 balls, melt your chocolate coating ingredients (leave a few tablespoons of crushed hazelnuts to add as a topping) in a saucepan on a very low heat, stirring often to make sure your chocolate doesn't burn
Coat each ball in chocolate thoroughly. Optional to add a sprinkle of crushed hazelnuts on top, before placing your chocolate balls in the freezer
