Ingredients
1cupalmond flour
6Medjool dates
6dried apricots (you can skip these and double the dates)
1/4nut butter of choice
1TBSPmelted coconut oil
1/4TSPcinnamon
1/4 TSPsea salt
1TBSPunsweetened cocoa powder
chocolate coating
3 TBSPdark chocolate chips preferable 70% or higher
1TSPcoconut oil
Instructions
Throw all your ingredients except for the chocolate layer ingredients into a food processor and blend until smooth. Dough should be crumbly but sticky and form a ball easily
Use an ice cream scooper or tablespoon to measure out roughly 10 pieces of dough and use your hands to shape the mixture into small balls
Melt your dark chocolate chips and teaspoon of coconut oil in a microwave and drizzle over each ball until they are covered fully in chocolate
Place the balls in the freezer to set for at least an hour. Keep the balls stored in the fridge or freezer depending on how firm you would like them
