2large bananasthey should be very ripe
1/3cupolive oil
1tspvanilla extract
1TBSPapple cider vinegar
2eggs
1cupgreen banana flour
1/4cupcoconut flour
1/4cuppure maple syrup
1tspbaking soda
1/4tspsalt
1tspcinnamon
Instructions
Preheat oven to 325 degrees and prepare a loaf pan with parchment paper
In a large bowl, mash the bananas. Then add in olive oil, eggs, vanilla extract and apple cider vinegar and mix until combined
In a separate bowl, combine green banana flour, coconut flour, baking soda, salt and cinnamon
Slowly add the dry mixture into the wet and stir until mostly combined
Spoon batter into prepared pan
Optional: split 3rd banana down the middle vertically then add on top of the batter for a little razor dazzle
Bake in the middle rack of a preheated oven for 25 – 40 mins (Cooking time will vary depending on loaf size). Do not over bake as green banana flour tends to dry out easily
Remove from oven and allow to fully cool
