Ingredients
  

  • 2 large bananas they should be very ripe
  • 1/3 cup olive oil
  • 1 tsp vanilla extract
  • 1 TBSP apple cider vinegar
  • 2 eggs
  • 1 cup green banana flour
  • 1/4 cup coconut flour
  • 1/4 cup pure maple syrup
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon

Instructions

  • Preheat oven to 325 degrees and prepare a loaf pan with parchment paper
  • In a large bowl, mash the bananas. Then add in olive oil, eggs, vanilla extract and apple cider vinegar and mix until combined
  • In a separate bowl, combine green banana flour, coconut flour, baking soda, salt and cinnamon
  • Slowly add the dry mixture into the wet and stir until mostly combined
  • Spoon batter into prepared pan
  • Optional: split 3rd banana down the middle vertically then add on top of the batter for a little razor dazzle
  • Bake in the middle rack of a preheated oven for 25 – 40 mins (Cooking time will vary depending on loaf size). Do not over bake as green banana flour tends to dry out easily
  •  Remove from oven and allow to fully cool
