Chicken + Delicata Squash Patties

Delicious and nutritious chicken patties - baby led weaning friendly!

Equipment

  • 1 Frying Pan
  • 1 ice cream scooper
  • 1 grater

Ingredients
  

  • 1 lb ground chicken
  • 1 cup shredded delicata squash about 1/4 of a squash
  • 1/4 cup green onion finely chopped
  • 1 TSP ground cinnamon
  • 1 TSP ground cumin
  • 1 TSP salt
  • 1/2 TSP paprika
  • 1/2 TSP garlic powder
  • 2 eggs
  • 1/2 cup breadcrumbs

Instructions

  • Place ingredients in a bowl and mix well with your hands. Using an ice cream scooper, divide into 12 and form 1 cm / 0.4" thick patties. Make a shallow dent in the middle of the surface – this prevents the patties from doming as they cook
  • Heat oil in a large nonstick frypan over medium heat. Cook patties in batches until browned on both sides and completely cooked, about 4-5 minutes per side

Chicken Delicata Squash Patties

Golden, poppable patties that hide a whole serving of veggies inside lean protein—perfect for both adults and toddlers!
These oven-baked rounds combine ground chicken (packed with complete protein, iron, and B-vitamins for growth and energy) with naturally sweet delicata squash (a beta-carotene powerhouse that converts to vitamin A for bright eyes and strong immunity). I especially love delicata squash because the skin is edible/no need to peel it off. 
Toddler & BLW friendly: soft enough to gum, sturdy enough to self-feed, and sized for tiny hands. Freeze a batch and you’ve got 30-second meals all week.
Serve warm with yogurt dip or tucked into a mini pita. Dinner done, nutrients won.
