Preheat the oven to 350 degrees F. Line an 8 x 4 loaf pan with parchment paper
In a large bowl, mix together the wet ingredients: yogurt, eggs, maple syrup, lemon zest, lemon juice and vanilla extract
In a separate bowl, add dry ingredients and mix well: oat flour, almond flour, collagen powder, chia seeds, baking soda and salt.
Mix dry ingredients into wet until combined, then gently mix in the raspberries
Pour into loaf pan that's lined with parchment paper. Bake for 45-50 minutes until a toothpick comes out clean. Cool bread in pan for at least 30 min before adding the glaze
In a saucepan, mix all the glaze ingredients until combined. Pour over the loaf pan transfer into the fridge to cool. Cut bread into 8 slices and enjoy!
