Ingredients
  

Wet Ingredients

  • 1/2 cup plain yogurt I used Ovino sheep yogurt 5%
  • 2 eggs
  • 1/3 cup pure maple syrup
  • lemon zest from 2 lemons
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup frozen or fresh raspberries

Dry Indredients

  • 1 cup oat flour
  • 1 cup almond flour
  • 3 scoops collagen My favourite brand is Great Lakes
  • 1 tbsp chia seeds
  • 3/4 tsp baking soda
  • 1/4 tsp salt

Glaze

  • 1 tbsp melted coconut oil
  • 1 tbsp melted butter
  • 1 tbsp maple syrup
  • 2 tbsp lemon juice

Instructions

  • Preheat the oven to 350 degrees F. Line an 8 x 4 loaf pan with parchment paper
  • In a large bowl, whisk together until combine: yogurt, eggs, maple syrup, lemon zest, lemon juice and vanilla extractIn a saucepan, mix all the glaze ingredients until combined. Pour over the loaf pan transfer into the fridge to cool. Cut bread into 8 slices and enjoy!
  • Add dry ingredients to the bowl: oat flour, almond flour, collagen powder, chia seeds, baking soda and salt; mixing until well combined
  • Mix dry ingredients into wet until combined, then gently mix in the raspberries
  • Pour into prepared loaf pan. bake for 45-50 minutes until a toothpick comes out clean. Cool bread in pan for about 30 min before adding the glaze
  • In a saucepan, mix all the glaze ingredients until combined. Pour over the loaf pan transfer into the fridge to cool. Cut bread into 8 slices and enjoy!
