Ingredients
1cupdry pressed cottage cheeseMC Dairy Brand is one example
1/3cupoat flourGrind large flake oats in a blender until you have a fine flour
2eggs
1TBSPsweetener of choiceI usually use maple syrup or honey
1tspvanilla extract
1tspbaking powder
2-4tbspbutter
1pinch of salt
OptionalTop with Greek yogurt or Ovino Sheep Yogurt + drizzle with honey or maple syrup
Instructions
In a large bowl, combine all of the above ingredients (except butter) until smooth
In a nonstick frying pan, heat 2 tablespoons butter. Cook one side for about 1-2 minutes, then flip and cook for another minute. Repeat with remaining batter, adding more butter in between batches
Serve with a dollop of sour cream or yogurt, fruit, and/or honey

Why make regular pancakes when you can make these delicious cottage cheese pancakes? (or as my grandmother likes to call them in Russian, "sirniki"). They are gluten free, packed with protein, lower in carbs (for those who are trying to improve their insulin sensitivity), and they won't leave you starving before your next meal.In my opinion, they taste just as delicious when they are cold.
