These high protein cottage cheese pancakes are everything!

Equipment

  • 1 Mixing bowl
  • 1 Frying Pan

Ingredients
  

  • 1 cup dry pressed cottage cheese MC Dairy Brand is one example
  • 1/3 cup oat flour Grind large flake oats in a blender until you have a fine flour
  • 2 eggs
  • 1 TBSP sweetener of choice I usually use maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 2-4 tbsp butter
  • 1 pinch of salt
  • Optional Top with Greek yogurt or Ovino Sheep Yogurt + drizzle with honey or maple syrup

Instructions

  • In a large bowl, combine all of the above ingredients (except butter) until smooth
  • In a nonstick frying pan, heat 2 tablespoons butter. Cook one side for about 1-2 minutes, then flip and cook for another minute. Repeat with remaining batter, adding more butter in between batches
  • Serve with a dollop of sour cream or yogurt, fruit, and/or honey

Notes

Why make regular pancakes when you can make these delicious cottage cheese pancakes? (or as my grandmother likes to call them in Russian, "sirniki"). They are gluten free, packed with protein, lower in carbs (for those who are trying to improve their insulin sensitivity), and they won't leave you starving before your next meal.
In my opinion, they taste just as delicious when they are cold. Add these to your next meal prep and have them ready to go for those early rush hour mornings.
