Protein Blueberry Pancake Muffins

These Flourish pancake mix mini muffins are on permanent rotation in our house and honestly I don't see that changing anytime soon. Only 5 ingredients, 10 minutes, and you have the most perfect grab and go breakfast that actually does something good for your body.

Ingredients
  

  • 2 cups Flourish protein pancake mix
  • 1 cup plain full fat yogurt
  • 1/2 cup milk I used 3.8% Hewitt's goats milk
  • 2 eggs
  • 1 cup frozen blueberries

Instructions

  • Preheat oven to 350 F 
  • In a large bowl, add pancake mix
  • To same bowl, add the yogurt, milk and eggs and mix with a whisk until combined. Gently stir in the blueberries
  • Scoop 1-2 teaspoons into each mini muffin. Do not overfill the muffin cups as they will rise quite a bit. Fill each cup only about 2/3 to 3/4 full to allow room for the muffins to rise and prevent them from spreading into each other
  • Bake mini muffins for about 15 min and regular sized muffins for 25-30 minutes or until a toothpick inserted into the center of the muffins comes out clean. Allow to cool slightly before removing from the tray.
  • This recipe makes an entire silicone mini muffin tray plus 4 regular sized muffins (or about 40 mini muffins)
