Ingredients
  

  • 1 cup mashed bananas about 2 medium bananas
  • 1/2 cup shredded apple
  • 1/4 cup shredded carrot
  • 3/4 cup full fat milk
  • 1/4 cup extra virgin olive oil
  • 1 large egg
  • 1 TSP vanilla extract
  • 1 cup almond flour
  • 1/2 cup oat flour
  • 1 TSP cinnamon
  • 1 TSP baking powder
  • 1/2 TSP baking soda
  • 1/4 TSP salt

Instructions

  • Preheat oven to375 degrees F
  • Place the bananas, apple, carrot, milk, olive oil, egg, and vanilla into a mixing bowl. Stir together
  • Stir the almond flour, oat flour, cinnamon, baking powder, baking soda, and salt
  • Divide batter among the silicone muffin pan, adding about 2 tablespoons of batter in each mini muffin cup
  • Bake for about 20 minutes or until a toothpick inserted into the centre, comes out clean
  • Transker to a wire rach to cool
